feat(matrix): add MATRIX_DM_MENTION_THREADS env var

Browse source 
When enabled, @mentioning the bot in a DM creates a thread (default:
false). Supports both env var and YAML config (matrix.dm_mention_threads).
6 new tests, docs updated.
