fix(gateway): make WhatsApp npm install timeout configurable

Browse source 
Default timeout raised from 60s to 300s (5 minutes) to accommodate
slower systems like Unraid NAS. Configurable via WHATSAPP_NPM_INSTALL_TIMEOUT
environment variable.
